Before extraction, the Breville BES820XL delivers three bursts of hot water into the fiter head via its 15-bar Italian-made Triple-Prime pump with a thermablock heating system. The espresso pod or ground coffee expands from the increased pressure, which gets rid of air pockets. This allows the unit to extract more crema for a smooth-tasting, rich coffee.
